Good Morning Granola: Katie's Homemade Granola Recipe

Good Morning Granola: Katie's Homemade Granola Recipe

A Little New York City Inspiration, Made Right Here in Inverness

Sometimes the best recipes come home with us from our travels!

During a visit to New York City, Katie stopped at the famous Eleven Madison Park restaurant. Inspired by their granola, she decided to create her own version to share with our Greens and Goodness customers.

The result? Good Morning Granola!

Greens and Goodness Good Morning Granola

Made with rolled oats, pistachios, coconut, pumpkin seeds, maple syrup, honey, and dried cranberries, it's crunchy, lightly sweet, and delicious sprinkled over yogurt, fresh fruit, or enjoyed straight from the jar.

Katie makes our Good Morning Granola right here at Greens and Goodness, and since good food is meant to be shared, we're giving you the recipe to make at home!

🥣 Greens and Goodness Good Morning Granola Recipe

Makes: About 6 cups
Oven: 300°F
Bake Time: 35–40 minutes

Ingredients

  • 2Âľ cups rolled oats
  • 1 cup shelled pistachios
  • 1 cup unsweetened shredded coconut or coconut chips
  • â…“ cup shelled pumpkin seeds
  • ½ tablespoon kosher salt
  • ½ cup light brown sugar
  • â…“ cup pure maple syrup
  • 1 tablespoon honey
  • â…“ cup avocado oil
  • Âľ cup dried cranberries

Directions

  1. Preheat oven to 300°F. Line a large baking tray with parchment paper.
  2. Mix dry ingredients. In a large bowl, combine oats, pistachios, coconut, pumpkin seeds, and salt.
  3. Make the syrup. In a small saucepan, combine brown sugar, maple syrup, honey, and avocado oil. Warm over low heat, stirring until the sugar dissolves.
  4. Combine. Pour the warm syrup over the oat mixture and stir until everything is evenly coated.
  5. Bake. Spread evenly on the prepared tray. Bake for 35–40 minutes, stirring a few times, until lightly golden.
  6. Add cranberries. Remove from the oven and stir in the dried cranberries.
  7. Cool and store. Let cool completely before transferring to airtight containers.

Katie's Tip: Granola gets crunchier as it cools, so don't worry if it's still a little soft when you take it out of the oven.

🍓 A Few Ways to Enjoy Good Morning Granola

Breakfast is the obvious choice, but don't stop there!

  • Yogurt parfait: Layer with Greek yogurt and fresh berries.
  • Fruit bowls: Sprinkle over sliced bananas, peaches, or strawberries.
  • Ice cream topping: Add a little crunch to vanilla ice cream.
  • Easy snacking: Keep a jar handy for when you want something sweet and crunchy.
  • Breakfast on the go: Pack a little container to take along on busy mornings.

Of course, there's nothing wrong with eating it straight from the jar. We won't tell!
